Other than plucking and cleaning birds as if you were to cook it, what further steps do you take if you are sending the bird to the freezer?

Nothing much really. I let them sit for 24 hrs to relax so the legs and wings can be moved easily. I bend the wings into the body and push the legs up towards the body and secure them together with an elastic band, just to make a more compact package. Then I bag, weigh and freeze them.
