I have never liked goose meat, maybe made into jerkey sometimes is ok. But, the fella I sold my beer distributor to gave me some he cooked up and it was pretty GOOD. He breasts them the covers them with apple cider and brown sugar, then cooks in a roaster for ?? awhile. Next takes the meat out and shreds with a fork. Can be made into sandwiches, or whatever. Sure beats selling them for 2-3 bucks each at the auction/swaps.( He has taken over 100 Canadas so far this season! and makes a bunch of the stuff).
