Here are a few recipes to use up those fresh eggs!!:

"Brindled" Eggs

Ingredients:

2 extra large eggs
4 tbsp chopped onion or leek
6 tbsp shredded mozzarella or cheddar cheese
5 tbsp Jalapeño Ranch dressing
1/2 tsp horseradish
dash garlic powder
dash black pepper
alfalfa bean sprouts
Shelled pumpkin seeds

In lightly oiled microwave-safe dish, beat together the eggs, onion, Jalapeño dressing, horseradish, cheese, and spices. Microwave at half power, covered, for approx. 5 - 6 minutes, stopping every couple of minutes to stir. When eggs are firm, but not dried out, remove from microwave and top with bean sprouts and pumpkin seeds.

Huevos El Rancho

Ingredients:

2 eggs
4 tbsp. Ranch dressing
1/2 medium white onion, minced
Black pepper, to taste

In lightly oiled microwave-safe dish, thoroughly beat together ingredients. Microwave at half power, covered, for approx. 5 - 6 minutes, stirring every couple of minutes. Serve hot.
Has a delicate, creamy flavor that goes well with buttered muffins or toast.

Oeufs Cordon Rouge

Ingredients:

2 eggs
3 - 4 tbsp. French dressing
1/2 medium onion, minced
black pepper, to taste
dash hot sauce, if desired

In lightly oiled microwave-safe dish, thoroughly beat together ingredients. Microwave at half power, covered, for approx. 5 - 6 minutes, stirring every couple of minutes. Serve hot.

Has a chewy texture and delicate sweet-sour taste that goes well with pancakes or a toasted muffin.

Zucchini Egg Scramble

Ingredients:

4 eggs
2 small zucchinis, in quarter-inch slices
3 - 4 oz. longhorn cheese, shredded
3/4 medium onion, sliced thick
4 tbsp Jalapeño Ranch dressing
1 pkg. NewMenu® TofuMate® Taco seasoning
1 tbsp. cooking oil (for frying)
black pepper, to taste

In a large frying pan, sauté the zucchini and onion slices under medium-high heat, tossing frequently, until brown. Meanwhile, beat the eggs, Ranch dressing, taco seasoning, and cheese together in a bowl. Lower the heat in the frying pan and pour the mixture in the bowl slowly into the frying pan. Continue cooking the combination in the frying pan, under low heat, scrambling frequently with a wooden fork or spatula, until the eggs are done. Serve immediately.

Breakfast Casserole

6 slices bacon -- cut in 2" pieces
1 small green pepper, cored, seeded -- chopped
2 tablespoons finely chopped onion
6 cups cubed cooked potatoes
1/2 cup shredded sharp cheddar cheese
6 eggs -- lightly beaten
salt and pepper -- to taste
In a large heavy skillet, cook the bacon over moderate heat until crisp. Remove the bacon to drain. Pour off all but 3 tablespoons of dripping.
Heat the dripping remaining in the pan till it sizzles. Add the pepper, onion and potatoes and cook, stirring gently, until the potato cubes are browned.

Sprinkle on the cheese and stir until it melts. Add the eggs and cook, stirring gently, until the eggs are set. Season with salt and pepper. Sprinkle on the crumbled bacon and serve at once.

Easy Breakfast Bake

3/4 pound pork sausage
1 teaspoon salt
2 1/2 cups water
1 cup quick grits
2 tablespoons butter
2 tablespoons all-purpose flour
1/4 teaspoon black pepper
1 cup milk or 1/2 & 1/2
1/2 cup Cheddar cheese -- grated
6 eggs
Preheat oven to 325°. Brown and crumble sausage. Drain off excess fat and set aside. Bring salted water to a boil and stir in grits. Cover and reduce heat to low. Continue cooking for 5 minutes, stirring occasionally. Melt butter or margarine and stir in flour, black pepper and milk. Cook, stirring to thicken. Add cheese, stirring until blended. Add sausage and 1/2 cheese sauce to cooked grits. Pour into lightly greased casserole. Make 4 indentions into grits mixture with the back of a large spoon. Break one egg into each indention. Bake at 325° for 13 to 18 minutes, depending on desired doneness of eggs. Serve with remaining heated sauce.
Serves 4.
