The sausage thought is very interesting....we used bull crest when I was a kid in sausage because it was so dry and lean that it was not good to eat as a roast. Old hen and rooster could also probably be added to game sausage too!

I get a couple of stewing hens every year just for chicken and dumplings. Cut up the bird as usual then put it in a pot with onions carrots celery garlic and salt and hot peppers.Boil it for a few hours until it falls off of the bone. Then debone it put it back into the pot,with out the vegges, make your favorite white gravey, make it thinner because the dumplings will also thicken it, bring to a simmer and drop dumplings into it cover cook until dumplings are done. Or bake it with a bisquick dumplings on top. Also I use the breast meat for stir fry then use the rest for stew.
