Joshua: The best book I've found is Storey Publishing's A Guide to Raising Chickens. It's very thorough.

A GUIDE TO RAISING CHICKENS by Gail Damerow published by Storey. Very informative and seems to agree with most everything I've found personally with my experiences raising my own flocks.
