Different colored chicken livers, what does it mean?

The Classroom @ The Coop: Poultry Health Archive 2 (older): Different colored chicken livers, what does it mean?
By Michigan on Thursday, January 21, 1999 - 12:56 pm:

This is the first year we have raised chickens. We had the cornish x butchered lately and noticed that all had the deep red color but 2 they where kind of a creamed coffee color. I don't know anyone that could tell me what this means. Can anyone out there tell me anything.

Don't worry about the coffee color. We have raised Cornish X Rocks for a few years and always see this in the livers. We feed Broiler Booster from Murray McMurray hatchery in the water and have our feed mill man mix special high-protein feed for our broilers. I am told the extra Vitamin A contributes to or causes this color in the livers. In our case, nearly all the livers are this color, with the rare ones darker. My wife, the liver expert, says they are wonderful. I'm a gizzard man, myself.
We always inspect the livers of any slaughtered animal very carefully, because, as you know, they are the body's filter. If you have your broilers processed, I suggest you ask someone who is back on the cleaning table their opinion of your livers. Anything out of the ordinary should be brought to your attention.
Hope this helps!
