Can you freeze eggs that you do not use? I have heard
We whisked them up and froze them in ice cube trays, then put them in bags. This gives you about an egg-sized portion when you want to use them. Could you just sell some?
My birds are housed in an unheated coop and on those days when we were unable to bring in the eggs in a timely manner, they froze. We just stuck the eggs in the freezer and so far we have had no problems. They seem just fine in cooking. Dr. Smiths method would probably take up less room in the freezer and unless you have a large freezer that could be an important issue.
